Pancakes Galore

I never understood how people could become vegan one day and stick with it long term. Don't they miss grilled cheese sandwiches? No ice cream? What about chocolate, milkshakes, and cake? And how could we forget the New York City staple, pizza? It's mind boggling for an omnivore like me.
But it's possible. Vegan cheese, vegan ice cream, vegan cake; they exist. And they aren't necessarily bland. As a vegetarian friend once reminded me, "We have taste buds just like you do." A visit to vegan blogger, Ariel Saffer and her Park Slope apartment proved that tasty vegan food is easy to create.
I filmed her while she glided back and forth in the kitchen: gathering sugar, whole wheat flour, bowls, a whisk and other ingredients and utensils. She was preparing to make vegan peach, blueberry, banana pancakes. Traditional non-vegan pancakes require eggs and milk, but in this modified recipe, she replaced them with soy milk and mashed bananas.
This was my first adventure with the camera as content producer for the website and the shoot wasn't exactly free of obstacles. The kitchen was very small so I had to stand in awkward positions as well as sit on the floor to really capture the action. Also, the window was not positioned in the most convenient place for shooting. So I had to glue my back to the window to get natural light. But it was worth it. I ended up with great shots of the pancakes, which make me hungry every time I watch it.
I'm not going to lie: I was surprised. They tasted incredibly sweet. They were definitely the best pancakes I've ever had in my life [sorry dad]. In fact, I loved them so much I decided to make them at home. It's the first time I've ever done anything in the kitchen since my last cooking failure. I managed to ruin instant ramen noodles. Yes, it's true. The pancakes turned out inferior to Ariel's version because of the bananas. PLEASE NOTE, for those of you trying to attempt this recipe, get really, really, really ripe bananas that have brown spots on them for ultimate sweetness! I'm proud I cooked something though. Thanks Ariel for inspiring me and hopefully other people to eat with the environment in mind!
